Sausage potato goulash
1 lb / 500 g potatoes, 14 oz / 400 g hot dogs, half onion...
8 lasagna sheets - oven ready ones
olive oil
1 pack (19oz/550g) of your favorite sausages (we use italian or chorizo)
1 can 15oz/430g diced tomatoes
1 tsp dried oregano or italian herbs mix
1 cup shredded mozarella
1 cup shreded mexican cheese
1/2 cup shreded parmesat cheese
Remove the sausage meat from the casing, warm up oil in the pan and sear the sausage while breaking the bigger pieces. Add diced tomatoes and oregano, cover and let simmer for 15 minutes. You can blend the mix to reach ragu consistence without big chunks of tomatoes and meat.
Mix all the cheeses together in a bowl.
I am using 2 small baking dishes where exactly one sheet of lasagna fits. Start layer your dish with a little bit of meat ragu. Then lasagna sheet, meat ragu, cheese- repeat the pattern, I have 4 layers of lasagna. You end the dish with cheese.
Bake about 25 minutes on 375 F / 190 C till the cheese on top is nicely brown. Let sit at least for 10 minutes to cool down before you serve it.
