Sausage potato goulash
1 lb / 500 g potatoes, 14 oz / 400 g hot dogs, half onion...
2 lbs / 1 kg potatoes
1/2 yellow onion
14 oz / 400 g hotdogs or another soft sausage
4 hard boiled eggs
1/4 cup chopped pickles
4 tbsp sour cream
1 cup shredded mozarella (or your favourite cheese)
1 tbsp dried oregano
oil, salt, pepper
Peel potatoes, dice them to small cubes and boil in salted water till they are almost done. Drain and put in large bowl.
Chop the onion and cut hotdogs for small pieces. Warm some oil on the pan and fry onions till lightly brows, add sausage and cook as well. Drain from oil and add to the bowl to potatoes
Cut eggs to small pieces and toss them in the bowl too.
Add chopped pickles, oregano, sauer cream and cheese and mix all well together. Season with salt and pepper to your taste if needed.
Transfer this mix into the baking dish and bake it in the oven for about 30 minutes on 355 F / 180 C.
Serve with pickles, another pickled vegetable or fresh vegetable salad.
