Crepes


500 ml milk
200 g flour
2 egs
1 tbsp of oil plus some for frying
pinch of salt

Mix flour, eggs, salt with about 1/3 of the milk in a bowl. Whisk till the batter is smooth, it goes much easier with less liquid in your mix. Add the rest of milk, 1 tbsp of oil and whisk thoroughly.You should have thin batter.

Bake on middle heat.Coat your non stick pan with thin layer of oil and laddle some batter in. Pour it in one spot and spread it all over the pan surface by moving the pan around. Leave to bake long enough so you can see change of the color all over the crepe and little bubbles and it is easy to unstick it from the pan and turn around. Dont leave, this takes minutes.

After you bake the crepe from both sides, move it to the plate, spread your favourite marmelade/jam on 1/2 of it and roll. You can serve with whipped cream, fresh fruit, cold or warm.
